Timeline

- Bulk ferment: 4 stretch-and-folds every 30 min over 2 hrs (fold in peppers, provolone & onions early), then rise undisturbed. ~4-6 hrs total @ 70-73F.
- Shape: Pre-shape, bench-rest 15-20 min, then shape gently. Seam-side down in banneton.
- Proof: Room temp 2-4 hrs, or fridge 8-16 hrs.
- Bake: Dutch oven preheat 450-475F. Covered 450F/20 min, then uncovered 425F/20-25 min. Internal temp ~205-210F.

Step-by-Step, Condensed
- Feed starter 8-12 hrs ahead (night before) -- ripe when doubled, domed, and tangy.
- Autolyse: mix bread & whole wheat flour with the main dough water. Rest 30-90 min.
- Mix in starter, then salt; work 3-5 min to shaggy-smooth. Target DDT 75-78F.
- Once dough has 1-2 folds in, fold in peppers, provolone & caramelized onions by hand.
- Bulk ferment ~4-6 hrs: 4 stretch-and-folds every 30 min over 2 hrs, then rest undisturbed.
- Pre-shape, bench-rest 15-20 min, then shape gently. Seam-side down in banneton.

- Bake in preheated Dutch oven: 450F covered 20 min, then 425F uncovered 20-25 min (internal ~205-210F).

The Story Behind the Ingredients
Banana peppers belong to the same species, Capsicum annuum, as bell peppers and jalapenos – a lineage that traces back to the domestication of chili peppers in Mesoamerica thousands of years ago. The banana pepper itself, as a distinct mild, tapered cultivar, is closely tied to 20th-century American agriculture and became a fixture of pizzerias, delis, and sub shops.
Provolone traces its roots to Southern Italy, particularly the Campania region, where it belongs to the pasta filata (stretched-curd) family of cheeses alongside mozzarella.
Troubleshooting / FAQ
Cheese moat around the base of the loaf – Provolone wasn’t cold enough going in. Keep cheese chilled right up until you fold it in.
Dough feels slack or gummy after folding in inclusions – Onions or peppers weren’t drained/blotted dry enough. Pat both thoroughly dry before folding in.
Bloopers
Even a well-tested recipe goes sideways sometimes. The cheese moat: a ring of melted provolone pools and crisps around the base of the loaf instead of staying tucked inside. The fix – keep those cubes in the fridge right up until the moment you fold them in.
